The citrus grove outside the studio is flowering. The lemon, lime, and cumquat are all bearing oblong green fruits. There is nothing quite exciting as the citrus in culinary terms (although the cumquat is a disputed Fortunella). Their foilage contains aromatic oils, their fragrant blossoms are edible, and their fruits are endlessly versitile: the zest, the pulp, the juice….. What would the world be like without citrus?
